Star of Wonder Brunch Recipes 2005


Cranberry Slush Punch
2 -16 oz can jellied cranberry sauce
1 – 12 oz can frozen apple juice
1-12 oz can frozen lemonade
1 tsp all spice
1 tsp cinnamon
Blend until smooth, Add 4 cups water stir & freeze. Serve with 7up, OJ, Champagne, or Ginger ale

Blueberry Stuffed French Toast [ Kyra Ludwigson]
12 slices homemade white bread, cut into cubes
1-8 oz pkg cream cheese
1 cup blueberries
12 large eggs
1/3 cup maple syrup
2 cups milk

Sauce:
1 cup sugar
2 Tbsp cornstarch
1 Cup water
1 Cup blueberries
2 Tbsp butter

Toast mixture: Arrange half of bread cubes in buttered 9X13 baking pan. Crumble cream cheese over bread. Sprinkle blueberries over cheese. Arrange remaining bread cubes over blueberries. In large bowl whisk together eggs, syrup and milk. Pour egg mixture evenly over bread mixture. Cover. Chill Overnight

To Bake: Cover with foil and bake in 350 degree oven for 30 minutes. Remove foil and bake and additional 30 minutes or until puffed and golden

Sauce: In small saucepan, mix together sugar, cornstarch, and water. Cook over medium heat stirring occasionally until thickened. Stir in blueberries. Add butter. Serve sauce as syrup over toast.

Danish Puff [Phyllis Paetznik]
½ c. soft butter or margarine
1c. all-purpose flour
2 Tbsp water

1c. water ½ c. butter or margarine
1 tsp almond extract
1 c. flour
3 eggs

Frosting Mix:
1½ c. powdered sugar
2 Tbsp softened butter
1½ tsp vanilla
1-2 Tbsp warm water

Heat oven to 350 degrees. Cut ½ c. butter into 1 c. flour. Sprinkle 2 Tbsp water over mixture; mix. Round into ball. Divide in half. On ungreased baking sheet, pat each half into strip, 12X3 inches. Heat up 1 c. water and ½ c. butter to a rolling boil in saucepan. Remove from heat and stir in almond extract and 1 c. flour. Stir vigorously over low heat until mixture forms a ball (about one minute) Remove from heat and beat in eggs (All at once) until smooth and glossy. Divide mixture in half. Spread evenly over strips. Bake about 60 minutes. Cool. Mix frosting ingredients until smooth. Frost. Each strip serves 12.
