Kindred Sisters Menu from Sept 21

Broccoli Cauliflower Salad

3 bunches broccoli
1 head cauliflower
10 - 12 slices bacon, cooked and crumbled
2/3 cup raisins
1/2 onion finely chopped
1/2 cup sugar
1 cup mayonnaise
2TBS vinegar
Wash vegetables and separate into small sprigs. In large bowl combine vegetables, raisins, bacon and onion.

In a separate bowl mix the sugar, mayo, and vinegar until smooth. Pour over mixture in large bowl and stir until dressing is thoroughly distributed. Refrigerate several hours before serving

Chicken Wild Rice Soup

2 cups cooked diced chicken
8 slices bacon, fried and crumbled
2 TBS butter or margarine
2 TBS chopped onion
1/2 cup diced celery
2 cups cooked wild rice (follow directions on bag)
2 cans cream of chicken soup
2 cans cream of mushroom soup
4 soup cans of milk
Sauté the celery and onion in the margarine in a large kettle. Add other ingredients and heat thoroughly

Chicken Broccoli Curry Hotdish

1/2 cup mayonnaise
1-10 3/4 oz can condensed cream of chicken soup
1-10 3/4 oz can cream of mushroom soup
1 TBS lemon juice
1-1 1/2 tsp curry
2 cups cooked pasta or rice
2- 10 oz packages frozen chopped broccoli, thawed and drained OR 2 cups fresh broccoli steamed
4 cups cooked, cubed chicken
1 cup shredded cheddar cheese
1 cup Italian style bread crumbs
2 TBS margarine melted
slivered almonds or finely chopped green onion tops
Heat oven to 350. In small bowl combine mayonnaise, soups, lemon juice and curry powder. In greased 13 X 9 baking dish, layer rice or pasta, broccoli and chicken. Pour soup mixture over chicken, sprinkle cheese on top. In small bowl combine breadcrumbs and margarine, sprinkle on casserole. Top with almonds or onions just before serving. Bake for 30-40 minutes or until heated through.

Jamaica Jamboree Punch

2 large pkg. lemon Jell-O
3 qt. hot water
2 c. sugar
2 c. ReaLemon juice
1-46 oz can pineapple juice
2 c. water
3 large bottles 7UP (Or Fanta pineapple soda)
Fresh or frozen strawberries (to taste)
Crushed pineapple (1-3 cans to taste)
1/4 bottle rum (Optional)
Dissolve Jell-O in 3 qts. hot water. Add sugar, ReaLemon juice, pineapple juice, and 2 cups cold water, pineapple chunks and strawberries. (Rum) Freeze. Keep frozen until ready to scoop into glass; add 7UP or Fanta Pineapple soda to mixture in the glass.
